- 1 kg of beef or chicken
- x1 onion
- x1 pinch of salt & pepper
- x1 bay leaf

- 5 cloves of garlic
- 200 ml of cooking broth
- Salt

🔥 Step 1: Cooking the meat
1️⃣ Place the meat in a large pot
2️⃣ Cover with cold water, add the onion and bay leaf
3️⃣ Simmer over low heat for 1 hour 30 minutes
4️⃣ Season with salt and pepper at the end of cooking
👉 Keep the broth: it is essential for what follows.
💧 Step 2: Cooking the galnash
1️⃣ Bring the meat broth to a boil
2️⃣ Unfreeze and immerse the galnash
3️⃣ When they rise to the surface, let them cook for 2–3 minutes
4️⃣ Drain gently
🧄 Step 3: Prepare the garlic sauce
1️⃣ Crush the garlic
2️⃣ Mix it with the hot broth
3️⃣ Add a little salt
🍽️ Step 4: Plating & Tasting
- Place the meat in the center of the plate
- Add the galnash around
- Serve the garlic sauce separately
